Filet of Beef with Mustard Sauce

Ingredients:


·         One beef tenderloin roast

·         1/4 cup of Dijon mustard

·         1 tablespoon coarsely ground black pepper

·         Fresh herbs (optional)


Directions:

Spread roast with Dijon mustard.  Sprinkle black pepper on top.  Place roast on cookie sheet.  Bake in the oven at 425 degrees for 50 to 60 minutes, or until meat thermometer registers 140 (for rare). Serve with Mustard Sauce Dijon.

 

Mustard Sauce Dijon

 

            1/4 cup finely chopped shallots or onion

            1 tablespoon butter

            1 tablespoon flour

            1 cup beef broth

            1/3 cup Dijon mustard

            2 tablespoons brandy (optional)

            1 tablespoon chili sauce

 

            In a medium saucepan cook onions in butter until tender.  Stir in flour.  Cook and stir until flour begins to brown.  Add beef broth.  Stir until thickened and bubbly.  Add mustard, brandy and chili sauce. Mix well.  Can be served warm or cold.
